I’m back after a brief hiatus, in part because I’ve been without groceries and not really in a place to write about food, food insecurity is REAL and before we start, highly encourage you to donate to local food pantries and check on your family and neighbors!
Luckily, I’ve been scoring produce weekly from a few amazing produce cart men who pass by the neighborhood on a regular basis.
Hope you’re all doing well, in whatever capacity and way you can during these times, they are trying for all of us! It’s my wish that this recipe brings nurturing in both a physical and metaphorical way, as I’m appreciative of your support always and this is a way for me to constantly give back to you all.
I’ll be sharing a lot more on recipes that are easy to make based on things I’ve been able to get my hands on, and in times like these, fresh produce, meat, etc can get scarce, but that shouldn’t deter us from experimenting with them and making tasty meals!
Without further ado, find this tasty, vegan cauliflower recipe below!
Cauliflower Buffalo Bites
Ingredients
Bites:
1/2 head of cauliflower cut into florets
1/2 cup flour
1/2 cup water
2 teaspoon garlic powder
2 teaspoon paprika
1/4 tsp cayenne pepper
1/4 tsp cumin powder
salt and pepper to taste
Buffalo sauce:
1/2 cup hot sauce
1-2 tbsp melted butter (works well with vegan options)
1/2 tbsp of Worcester sauce
1 tsp of brown butter
** you will either want to bake them or fry them, I’ve given you instructions for both
Directions
Mix your bites ingredients in a bowl. This is what you will be coating your florets with, before adding the water, make sure the dry ingredients are evenly mixed.
Add water into the bowl and mix. This wet mixture is where you’ll dip your florets into and then either add them to baking pan or frying pan.
If you’re frying them, you need oil and make sure it’s heated around to 350F, you want to have all the florets ready by then so you can gently put them into your frying pan, make sure they both get even time, when they look golden, take them out and place them on paper towel to absorb excess oil.
If you’re baking them heat your oven to 450F. Add florets to baking pan lined with parchment paper. Place florets with space in between them, bake for 20-25 minutes.
For the sauce, add all ingredients into a sauce pan, as the butter and sugar melt, gently stir. Once the ingredients have combined evenly, remove from heat.
Once your florets are fried or baked completely, add them to a serving bowl and coat them with sauce. Wait a couple of minutes until they have absorbed the sauce, make sure to coat them evenly. ENJOY!
