On Acknowledging It’s In Fact a New Decade 🥳
The start of a new year is like a clean plate, you get to decide what to fill up with again. I’m not the kinda person who focuses on New Year’s resolutions anymore, a sense of direction, yes – a list of things that I have to compulsively cross off like on a scavenger hunt, not so much.
I began the week by checking in with myself, how am I feeling? Both physically and mentally, do I feel like I could use a detox? Absolutely. Do I regret letting myself indulge during the holidays with family and friends? Absolutely not. If anything 2019 taught me that situations are never just black and white, but every shade in between, so why commit to absolutes?
I’m coming into 2020 with a renewed sense of optimism, as long as my goals are aligning with my gut and heart, there’s growth. But enough about me, do you have time to talk about salads?
Green Is the New Black 🥬
Whether you liked them chopped, shredded, tossed, sans dressing, or soaked in some sort of vinaigrette, there’s nothing fresher than eating salads especially when you’re trying to incorporate more colors and leafy greens into your life, because you are healthy-ish.
It’s always the best kind of challenge for me to turn something that is an all-time favorite but may not be the healthiest, consider the Asian Chicken Salad from Cheesecake Factory which can go over 500 calories (and we’re talking about the Skinnylicious version)!
Below I give this classic a healthy spin:
Sesame Salad
Ingredients
1 small romaine, chopped
1/2 purple cabbage chopped
1 tsp of cilantro
1/2 shredded carrot
1/2 tbsp of sesame seeds
For the dressing:
1 tbsp aminos sauce
2 tsp toasted sesame oil
1 tbsp white vinegar
1 tbsp olive oil
1 tsp coconut or date sugar (low glycemic) or your sugar of choice
Directions
Combine ingredients in a mixing bowl, drizzle with lime juice and enjoy!
