Lockdowns and Melt-downs
Times of need beget creativity, particularly when itâs hard to come by fresh ingredients, (even if youâre still very much into dairy, no judgement here bb) âif youâre unlike me, then youâre probably somewhat spoiled with the luxuries of PRIME deliveries and not-so-strict lockdowns that still allow for grocery shopping without it feeling like a hardcore drug deal is going down, one in which you come up short of produce. đ„(Thanks, Iâm here all night) If youâre like me, then we both just spent the past 7 weeks without groceries but with a fervent appetence for lettuce.
By now youâre thinking ââWow, wouldnât it be advantageous to posses skills such as making milk and cheese from something as prevailing as cashews or tahini, because nuts and seeds are pretty much everywhere?â Who needs overpriced nutritional yeast anyways? Certainly, not I, a person whoâs pinching pennies from now until we make it out of this âGreat Depressionâ vol.2.
Trust me, by the time youâre done scrolling through this you will be fully capable of leading your own commune.*

Vegan Cashew Block
Ingredients:
1 cup raw cashews (unsalted)
1/3 cup water
5 tbsp lemon juice
2 tbsp coconut oil
1/4 cup tahini
2 1/2 tsp kosher salt
1/4 tsp paprika
1/8 tsp cayenne pepper
1 tbsp dijon mustard
1 tsp garlic powder
1 cup of filtered water
1 tbsp agar agar powder
Instructions:
Add cashews, 1/3 cup water, lemon juice, coconut oil, tahini, kosher salt, paprika, cayenne, dijon mustard and garlic powder to a blender + blend until very smooth. Set aside mix, but donât remove from blender.
Mix cup of water + agar agar powder into saucepan and heat, stirring regularly until boiling. Boil for a minute, then remove from heat and add to blender.
Blend until smooth.
Pour mix out into a bread pan lined with wax paper + sprayed with non-stick spray.
Refrigerate until set. Remove from pan, slice that baby up!
Quick âblue cheeseâ dressing
Use half a cup of this cheese, mix with:
1 1/2 tbsp apple cider vinegar
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp dried dill
Vegan Caesar Dressing
Ingredients:
1/4 cup tahinis
1 tsp spicy mustard
2 tbsp lemon juice
2 tsp capers (include brine)
4-5 garlic cloves
pinch of kosher salt + pepper to taste
2 tbsp olive oil
Instructions:
For this, all you need to do is add to blender and mix! Depending on the texture you can add more olive oil, one tsp at a time to get the perfect consistency.
